This is a post someone shared with me.

Knishes

"i wouldn't advise it using a white potatoe - , slice a turnip really
thin (with an electric profession slicer) use two pieces and put a mix of yukon golds, pepper and marinated onions in nama shoyo, honey and olive oil (dehydrate the mix for awhile then put in between the turnip slices)- tell her though i have no idea how to substitute the schmaltz (that's rendered chicken fat for the uninitiated!)

Carol, you have got me drooling....could probably use some oil for the schmaltz, a thick one, like coconut oil that will solidify...oh this is going to be fuuun! :D :D

mmmm.... I loved me some Knishes... one of my favorite feel-good satisfying SAD foods! I wouldn't try to duplicate as I'm sure it would be disappointing for me but ahhhh... the fond memories that come to mind!

try this: OMEGA NUTRITION coconut oil (it does not smell/taste
coconuty! It's trully like szmaltz - Crisco !!!!! Joz

Knishes; have a 'dough' like texture how about doing this for cheese ones?
Noodles: Dough ****was recipe of the month April here: http://www.rfliving.com/index-4.html
1/2 cup almonds
3/4 cup sun dried tomatoes
2 cups water
1 cup golden flax meal
1/2 cup carrot
1/2 cup choppedred pepper
1 clove crushed fresh garlic
1 tablespoon minced fresh oregano
1/4 cup chopped white onion
1 teaspoon lemon juice
To make the noodles:
1. In a medium bowl, place the almonds and 1/2 cup of water, allow to soak on the counter overnight.
2. Drain the almonds, and discard the soak water.
3. In a medium bowl, place the sun dried tomatoes, add the 1/4 cup water, and allow to soak on the counter, for 30 minutes.
4. Blend all ingredients including the sun dried tomato soak water in a food processor until well blended.
5. Spread on a fruit roll up tray or parchment paper sheet in the dehydrator into 4 X 4 inch squares, dehydrate at 115 degrees until you can flip over onto a mesh dehydrator sheet, and continue dehydrating until firm, but not crispy. THE KNISHES WOULD BE: CUT SMALL SQUARES OF DOUGH FILL AND FOLD THEN FINISH DEHYDRATING?
cheese filling:
3 cups cashews
2 cups water
3 tablespoons tahini
1 tablespoon chickpea miso
1 tablespoon lime juice
3 cloves crushed fresh garlic
1/2 cup white onion
2 tablespoons nutritional yeast flakes
2 tablespoons minced fresh basil
2 teaspoons minced fresh oregano
***the 'saute/marinated onions a must!

I just saw this recipe. Gosh, I'm a year late. Thanks for sharing. Wonder why the are talking about noodles as knishes are not that at all.
