Henkle makes great knives. We got a set for our wedding and they still work extremely well.

There was a thread going on about this quite a while back.
I personally like Rada. They are cheap, but very, very good. Light weight, which to me is a plus. I extensively use the tomato knife. Here's a link to the web site. I actually got mine through a gal at work who was doing a fundraiser for her church.

Veganforlife: How long have you owned your Rada knives? I like the old fashioned look, and the price is definitely doable! I think my MIL would love some of these and I could order them for her birthday! Thanks.
Do you also own the sharpener? Seems like that would be a major plus to keep your knives sharp!

Ceramic Knives also help food last longer. Like if you cut an apple with a ceramic knife, it wont start to oxidize as fast.... Cool huh.

when I went to a raw food demonstration by kelly Serbonich (I think that's her name) she used a ceramic and basically said how great they were ... i'll probably get one in the furture.

I find that Kyocera ceramic knives have been the best for me in all my raw endeavors. I bought a few from Metrokitchen.com (www.metrokitchen.com).(they offer free shipping too!) I highly recommend these knives. I've never had better.

I use Henckels but also have many knives made in japan like the ones found http://www.japanese-knife.com and http://www.japanesechefsknife.com
for beginners I would not suggest you go with the Japanese knives
I'm a huge fan of MAC knives (http://www.macknife.com/). They hold up amazing and have a good feel in the hand. They have several levels/styles as well. The ones I have are rounded tip, not that nasty pointed bit *G* and have a hole in the blade for hanging which is nice.
I've used Henckles and Wustof and after consistent use they do require sharpening a lot. I've not had to sharpen my Mac knife in the 4 years I've owned it. My brother uses his more than I do but he didn't need to sharpen it until he'd had it a couple years.
I do want to get a ceramic knife though ...
