View Full Version : Anyone have a recipe for making Ice Cream without using bananas?

I used to LOVE store bought ice cream but now that I am mostly raw and don't eat any dairy products I've been craving ice cream. I did make some for my kids with bananas and I also made it with other fruit added to it. I'm not the biggest fan of bananas and I would like to make some ice cream that tastes like vanilla or something. Any ideas or recipes? Thank you

For me, it all starts with...

1 cup cashews
2 cups water

From here, add your sweetener and flavoring

Sweetener: ~1/2 cup Raw agave or 6-10 dates, depending on desired sweetness.

Flavoring: scrapings from 1/2 vanilla bean, or 1/4 cup carob or raw cacao, or fruit, etc...

Process all in food processor, then put mixture in ice cream machine...comes out pretty good.

I'm still experimenting with this, so I'm sure someone else will come by and have something better. I think I will start with adding young coconut meat/water to the mix, and see how that goes.

The problem is, you have to have an ice cream maker for almost all. THEN you can really "get down". I totally use frozen mango chunks from trader joes. It's creamy like banana but is mango. I dig frozen mango much more than raw, not that raw is bad.

I also eat Larry & Luna's at times. I think it's pastuerized, but at least coconut doesn't get harmed by heat at all. It's close enough, and SUPER healthy! I love Oregon!

This is well worth the time is takes to prepare.

Better than Ice Cream

Step 1: The Almond Cream
3 cups water
3 cups almonds, soaked overnight and peeled
8 dates, soaked
Step 2
Above Almond Cream mixture
4T agave nectar
1 t vanilla extract

1. Peel the almonds. The skins should just pop off if you squeeze the almond in between your fingers. (This process is worth the time it takes to peel, I promise!)
2. Add ingredients to Vita-mix or high speed blender and blend until smooth. You may need to use the tamper to help this mixture turn over.
3. Add contents into a nut-milk bag and squeeze all the liquid from the pulp.
4. Transfer liquid to clean Vita-mix or blender and add the second step ingredients: agave and vanilla extract and blend for 30 seconds.
5. Pour into a large glass bowl and chill mixture in freezer for one hour. This has to get really cold before it goes into the ice cream maker.
6. Pour ingredients into ice cream maker. Let mix for 45 minutes or until desired consistency.

Variations:
Mint ice cream: Substitute ½ teaspoon mint extract for vanilla extract
Chocolate ice cream: add 2 T cacao powder

Check out this link for an amazing Cherry Garcia ice cream. I made this tonight and it's wonderful. Scroll down to post #12 for the recipe. I didn't have any tart cherry juice, so I threw in a couple x-tra cherries.
