I craved cooked Hummus and saw that a local natural foods market had raw hummus but it was very expensive! So I was just wondering before I buy it what other people in general think about raw hummus. Does it taste very similar to cooked hummus or is it completely different?

I love hummus too - was wondering this. I'm totally a neophyte when it comes to sprouting beans - up until discovering raw I got my beans from a can... ;) I still eat cooked hummus from time to time b/c it became a staple of my vegan diet. So, I'm very interested - Lay Lay is planning to send me her recipe - I'll pass it along when she does (if she doesn't mind):)

This recipe is awesome. It tastes just like hummus I swear.

No Bean Humus

2 medium zucchini
1/4 cup olive oil
4-8 garlic cloves
2 t celtic salt (or use dulse flakes)
1/2 cup lemon or lime juice
3/4 cup sesame seeds
3/4 cup tahini
1/4 t cayenne
1 t paprika
1 t ground cumin

Process zucchini, olive oil and garlic first in food processor. Add remaining ingredients and process until smooth.

chick pea hummus
8oz raw sprouted chick peas
2 cloves garlic
2 Tbs tahini
juice of 1 lemon
1/2 cup olive oil
1 Tbs parsley
water


put everything except water and parsley into food processor. Process while adding water until mixture is smooth. add parsley and pulse to incorporate. you may have to adjust the amount of olive oil based on the moisture of the peas. i like my hummus a lil on the thicker side so i add more oil than water. Usually the rule is add enough oil the make it form a ball in the food processor. I then add water till it falls back down. you can also adjust the level of garlic. I like a lot. They call me DragonBreath.

sweet pea hummus
8oz raw sprouted sweet peas
1 Tbs tahini
1/4 cup olive oil
juice of 1 lemon
1/2 cup loosely packed mint
sea salt
water

Blend everything except the water until a ball forms then use the water to thin to a consistency you like.

black bean hummus
8oz Sprouted black beans
3 cloves garlic
2 Tbs tahini
2 Tbs cumin
olive oil
water

Processes beans, cumin and garlic in FP while adding olive oil until it forms a ball then add water until desired consistency is reached.

I tried the raw chickpea hummus. Ppppyuck! Didn't taste a thing like cooked hummus. Had a very starchy flavor to it and was not smooth or dippable at all. I do like sprouted chickpeas though. I just eat them like popcorn.

I made the raw hummous from Alissas book today...it turned out great - needed a little tweaking though - i added some curry powder to jazz it up a bit and some blended celery - YUMMY!

hey I would do a bit of research before i used that black bean hummus recipe--i thought black beans were toxic if raw, even if sprouted....!!????

I've had it from two different places, including today. I think it tastes sprouty. I still like it, but definately not as good as the real thing...at least not what I tried. There seem to be so many variations. I know one was sprouted garbanzo beans...I bought it from a man at a famers market selling sprouted everything.

Personally, I LOVE the sprouted chickpea hummus. I use Carol Alt's recipe from her book, and I think it tastes good. Not like cooked hummus, but I don't feel the need to recreate old SAD tastes....I like having new flavors :)

How long is best to sprout chickpeas for after soaking them for hummus? Im having another go at it & will tweak the flavouring a bit so it doesnt taste so, er, raw....

Any suggestions?

Rawcutter... which is your favorite of the three you posted? I never tried making raw hummus with peas as everyone always says it tastes like YUK!

Made this last night and it was better than any store bought stuff I've had!! I added some red peppers, which I marinated for a few minutes in olive oil to make them softer. So yum!!!

I love the hummus that comes from the zucchini! I think it's easier than sprouting the chickpeas.....sprouting and using chickpeas never turned out quite right for me. Maybe I could use some pointers on sprouting them. Like I said, zuchini is easier...just pull out the zuchini and process away.

Made NZGirl's recipe last night. OH MY! Absolutely great. Better than the usual, store-bought regular hummus. I did cut back on the garlic, tho!

Zucchini Hummus

2 cups peeled zucchini, chopped
4 tbsp. olive oil
1 1/2 lemon, juiced
3/4 cup ground sesame seeds
3/4 tsp sea salt
2 garlic cloves
1 tsp paprika
1 t ground cumin
cayenne to taste

Blend in FP.

This is really good... closest thing to the real deal I've had.
