I was wondering if anyone could give me ideas for what to marinate vegetables in, and how long do you marinate them for?

I marinate veggies in a little bit of oil, salt, pepper, any herbs you want to throw in, and then some lemon juice or vinegar. My favorite veggies to marinate are mushrooms, bell peppers, asparagus, onions (they become milder), and zuccini.

My favorite marinade for broccoli is olive and flax oil, sea salt, and garlic. By lunchtime, it tastes like sauteed broccoli. You can add lemon if you want.
Another good one on broccoli is the above, plus lemon and dill.
For mushrooms, nama shoyu, garlic, and olive oil is good.

just did a "what can we do to use up some veggies in the fridge" marinade:
several portabella caps, cut up
chopped red onions
a few coarse chopped tomatoes
some chopped zucchini
leftover sprouted mung beans and mixed lentils
marinated with:
tiny bit of asparagus marinade (leftover-this had balsamic vinegar/tamari/olive oil/herbs)
mostly apple cider vinegar
olive oil
sea salt
garlic
black pepper
pinch of cayenne and chili powder
thyme
cinnamon
chipotle tabasco (not raw i know, but just a dozen drops and yummy)
let this sit overnight and then took collard leaves, spread with smushed avocado and put in the marinated veggies (strained this real good), diced green onions and lots of chopped cilantro.
next time, if i have it, i will add corn, and i would like to try with sprouted black beans.
right now i am sprouting split peas for the first time....so, if anyone has any ideas on making a split pea soup, i am all ears. i have a few ideas floating around already, but would like some more feedback on it.
