after i freeze nuts, what do i do when i want to eat them? do they need to defrost? and for how long? oh so confusing... and i have quite a few recipes calling for soaked nuts, do i soak them right out of the freezer? man don't get me started on the threads i read about rancid nuts... help! :eek:

Hey there. You can start soaking them right from the freezer. Do you have Alissa's book? It describes how to soak and then dehydrate. Soaking breaks down the natural enzyme prohibitors nuts contain. Then dehydrating makes them crunch again and able to be stored for longer periods. If you search with the banana up top :rolleyes: you can find loads of info on soaking/dehydrating nuts.

thanks for the help vegan, i haven't bought her book yet, but i'm pretty sure i'm going to cave this weekend and shell out the dollars for it.

Vegan,
I have a freezer full of nuts. Aside from Almonds, what do you suggest soaking and dehydrating? I feel like running the D all weekend ;)

Do you have Alissa's book? Thumb through that and figure out what hits your fancy. Or do a search on here for any recipe you might be craving.
