I'm craving mexican food NONSTOP during my pregnancy, and wondered if anyone had some great recipes that I can use. Oh, I don't have any fancy equipment at all, I have a blender, a food chopper, a shredder/slicer attachment for my stand mixer, and just bought a juicer. I'm particularly interested in things like alternatives for refried beans and such, I just figured out how to make guacamole so I'm set on that (which I had my first avacado ever just 2 days ago, I decided I like it LOL)

Oh sure! There are a ton of recipes on here...

Refried beans-I kid you not!

Two cups of raw sunflower seeds, soaked overnight, which then = about four cups.
1/2 cup flax seed oil
3 Tbls. of raw nut butter ( I used almond, try tahini)
1 tsp. sea salt
3 tsp. cumin (key ingredient, don't even try it without!)
2 tsp. chili powder
1 Tbls. raw apple cider vinegar (with the mother)

Throw it all in the food processer, adding a bit of water as you go along until it is all smooth.

Guacamole:
avacado
tomato
cumin or whatever spices you love
onion
jalapeno if you like that

blend in FP.

Enjoy!

I love Mexican, too and could never get enough of it while I was pregnant!
Here's something that's a staple at our house:

2 cups sprouted chickpeas
4 cups fresh raw sweet corn
1/2 cup finely diced red onion
1 tbsp chopped fresh cilantro
1 cup red bell pepper, diced
1 jalepeno pepper, seeded and finely chopped
2 cups chopped tomato
1/4 cup olive oil
4 tbsp lime juice
cayenne pepper and celtic sea salt to taste (optional)

We serve this over a bed of mixed greens. Yum!

oh you have to have the spicy walnut meat. i don't have the recipe off hand --

but it's about:

1-1/2 C walnuts (soaked a bit)
cumin
coriander
cayenne
salt (to taste)

whir it up in the food processor. spicy deliciousness! roll it up in a lettuce leaf or nori wrap w/ avocado, tomatoe, mango, shredded lettuce. mmmmm

Wow! I can't wait to try these! I can vouch for the Walnut Taco Meat, it is awesome!

If you need some cheese, a simple cheese spread (or thinned to a sauce) made from a cup or so of pine nuts, about a tsp of lime juice, and then a 1/4 tsp each of sweet paprika, jalapeno powder, onion powder and garlic powder. You could use 1 tsp of chili powder instead of the other seasonings if you like. Then add water until it reaches your desired consitency, and add salt to taste. The salt makes it taste cheesier, but only to a point before it starts tasting salty.

add 1/4 onion
1-2 garlic
1-2 sticks celery
1 Jalapeno

Thanks y'all! I caved earlier and made some refried beans (cooked) because I *needed* something mexican, and now I'm having some tummyaches because it was my first non-raw food today, and oh gosh the gas............... lol *eeeeeewwwwww* I think that for tomorrow's mexican craving I'll try something off this list, along with some fresh homemade tortillas and my leftover guac that I made this afternoon. I can't believe that I'm eating mexican food every day, I don't even *like* mexican food most of the time and used to have to force myself to a weekly taco night to use up leftovers before this pregnancy, and yes I picked and moaned over it because it just isn't something I eat.................. Strange what happens to a body when pregnant. LOL

The Nacho Cheese from Alissa's book is really good. Everyone I know who has tried it has liked it.

I see no one has added the real mexican ingrediant... corn! I'm hispanic, and I can't use flax in place for the nachos :p I ground my own raw fresh corn, and dehydrate into chips, make sunflower seed cheese, raw pico de gallos, raw guacamole, etc. its the best! I don't like using no-mezo american type ingrediants for mexican foods, just not the same, ya kno =D

Alissa's enchilada wraps are great!

And the corn wrap for my Fajitas is awesome for soft tacos/fajitas, etc.
