that Spicy walnut taco meat recipe is addictive? :eek:
I just made it for the first time today, wrapped it in kale leaves with guacamole.
It's so easy to make and tastes really, really good. I haven't had much success with nuts in a savory dish until now (haven't really liked any of the recipes that I made before). Thank goodness my stomach doesn't hold as much food as it used to, I would have eaten the whole bowl! I like it really spicy, so I added lots of cayenne pepper. This recipe is going to be a staple in my diet for a while! Yum!!!

Sorry, I should have put that info in my post.
It's a recipe from Matt Amsden I believe, in his book Rawvolution. I found it, however, on another raw food board, goneraw.com
The recipe is simple;
1 1/2 cups soaked walnuts, ground
1 1/2 teaspoons cumin
3/4 teaspoon coriander
2 teaspoons nama shoyu
cayenne pepper to taste
just mix it all up and put it in whatever wrap you like. Or not. I ate some of it with a spoon! You might want to experiment with the amount of seasonings to get the right flavor for yourself. Enjoy, it's really good!

I love this too!! Very yummy & addicitive. I eat it with salsa on romaine leaves. I often have this daily. Though because of the salsa, I find just chili powder is enough to season the walnuts. If you don't have any lettuce leaves, you can make a bowl of this too.

I have his book too, I think that this recipe is part of the tostada recipe on page 156. In that recipe, he also suggests that you use 1 1/2 teaspoons chili powder rather than the cayenne pepper. I am going to try that next time.

Corn Tortillas
12 ears corn
1/4 yellow pepper
1/4 orange pepper
2 cloves garlic
1/4 cup soaked sun dried tomatoes
2 T sprouted flax seeds
2 t cumin
2 t sea salt
1/4 cup chopped parsley
Cut the corn off the cob. Put all the kernels in a bowl of water and let sit for about 10 minutes and drain. Put all the ingredients in the food proccessor and process for about 2 minutes. You want it a little soupy. Spread the mixture onto a non-stick sheet and dehydrate for about an hour or two. Flip it onto the screen and dehydrate overnight. It should come out nice and crispy. If you find holes in the chip after the flip, you can fill them in with some more batter. This recipe made 3 sheets (11x11).

Top tortilla with smashed avocado. Layer 3 is the walnut meat.
walnut meat
1.5 cups walnuts
2 cloves garlic
2 Tbs cumin
1 Tbs chili powder
tabasco
sea salt
lime juice
proccess walnuts, garlic, cumin and chili powder in FP until desired consistency. add tabasco, sea saalt and lime to taste and pulse a few times to incorporate.
over the taco meat dollop your sour cream
1 cup cashews covered with water and soaked for 2 hours
process in FP with juice of 1 lemon until smooth
top with tomato lettuce onions and hot sauce

here is how i make mine....IMO MUCH tastier!
1 cup walnuts soaked 4 hours
2 t. chilli pwdr
2 t.cumin
1/2 t. garlic pwdr.
1/4 t. salt
just pulse til crumbly...right before it gets sticky!
I sometimes add onion pwdr too.
i have made this many many times & it is a staple in my house!

oh my goodness this is really good!
I made some "meat" with chili powder and another batch with fajita seasonings!! I put the chili "meat" in my salad for lunch today and it really looks like ground meat... and the taste? mmmm.

About how much would this be in cups? I usually just eat my corn on the cob right off the cob since it's so good that way. I would probably use frozen corn for this recipe.

I did not expect this to be so good. Here's what I used (sorry, no measurements, but I used a liberal amount of everything)
Walnuts, soaked, with some of the soak water
Lemon juice
Garlic
Nama Shoya
Cumin
Chili Powder
I am absolutely going to play around with a taco shell recipe now so I can make tacos for my SAD friends! They will never believe this stuff is just walnuts!:D

I ran out of walnuts and I haven't let myself buy anymore nuts until i finish up the thousand pounds of all the assorted ones I have now, so I tried making it with almonds. Ok that gets a big fat YUCK. :o

Nama shoyu is what makes it stick togheter like ground meat. Add the same amount of water if you omit it. I also noticed the recipe posted here says soaked walnuts while the original is unsoaked, so you may not need to add water if you used soaked nuts.

The recipe is under the thread "spicy taco meat", as of this post, it was the second from the top. Anyway, there are 2 different recipes and a different verson for the recipe you are talking about. Instead of using 1 cup of walnuts, she used 1/2 cup walnuts and 1/2 cup zucchini to lighten it up.
