I am so happy to report that I've discovered a new winning recipe for my 3 year old daughter...very simple- we call it "noodles" and she eats it like it's "real" noodles( a past favorite).

French carrots (we just discovered these at our local farmer's market) which are really fat carrots, they are much juicier and sweeter. I'm sure that regular carrots are fine too.
Jicama

Just grate the carrots and jicama into a bowl, add some braggs or RealSalt and maybe some olive oil and see what happens!
We also used this combo in our nori rolls with guacamole and sunflower sprouts last night and the whole family gobbled 'em up!
Let me know what you think.

Just grate? Or grate in long strings like noodles?
