Hello everyone. My mom has a client that can't have nuts but really wants some cheesecake. I am wondering if it is possible to make a raw cheesecake without nuts since she can't have them. Thanks for the info :D

Firicia,
I was thinking about that the other day, too. One option is to use a creamy base, like young coconut meat, and blend it with various fruits--bananas, mango, peach, etc. And then make a sort of "frozen" cheesecake with it. It won't be as rich as using nuts, and may also kind of have a sorbet quality to it. But look at what you're taking out; fat; and try to substitute something. You could use avocado, coconut, durian, or any of the fruits that provide that creamy consistency. For the crust, why not try sprouted buckwheat instead of nuts? I think you could definitely come up with some good options. :)
