I was really in the mood for something with a Mexican (OK, Tex-Mex) flavor tonight for dinner, and was at the store when this idea came together. Since I made all this without measuring and did some flavor tweaking here and there, I am not sure the recipe is 100% accurate just yet. I'm going to make it again tomorrow to verify my estimations for measurements were correct.
This was also my first ever attempt at my own semi-complex raw meal preparation. I was thrilled that it turned out so good!
