OK I bought 2 plantains 2 weeks ago at WF's and have been letting them SLOWLY ripen on my counter. I have never bought plantains before but I was told that they are yellow-black when truly ripe. I wanted to make plantain chips with them but all the recipes I've found for plantain chips require them to be fried. Any one have any ideas what I can do with these suckers? How *ripe* they have to be before I can do anything with them?

When truely rip mash them up with cinnamon and cayenne plus EVOO and just eat.

Slice length wise marinated in same flavors as above thendehydrate for 10-12 hours on 110.

Definately and acquired taste especially if you use to eat them fried in EVOO, butter and onions like I use to.:)

FINALLY got one ripe...peeling was a bit*h, I don't think it was fully ripe all the way around. So I sliced it to make 'chips' and stuck it in the D. Checked them a few hours later...had a sample of course...and then ate them all...lol...

So they taste exactly like banana's...to me anyways. I'm still waiting for the last one to ripen up...

yep, they taste very similar to bananas. never thought of making chips with 'em, need to try that. and, the blacker they get, the sweeter they are.
