Hello

I just bought 1 Kilogram (over 2 pounds) of raw macadamia nuts. And have been drooling over my key board looking at recipes that show up on this site that use them.

Typically do not purchase them and wonder what would be the neatest recipes to make something special with them (possibly to be shared with SAD eaters and/or to convince me to buy them more often)?

Thanking all contributors' suggestions in advance...

This is one of my favorites using macadamia nuts.

Mashed Taters

- 1 Cup cauliflower
- 1 Cup Pine Nuts, unsoaked
- 1/2 cup macadamia nuts, unsoaked
- 3 Tablespoons Olive Oil
- 1 1/2 Tablespoons Italian Seasoning
- 1/2 Tablespoon minced garlic
- 1/2 teaspoon celtic salt
- Fresh ground black pepper to taste.

Process nuts in a food processor for a few minutes
until they stick to the walls of the processor. Mix in
remaining ingredients and process until smooth. Add a
little water if necessary to achieve desired
consistency. Serves 4 to 6

Appreciate these ideas.

Had been thinking/fantasizing about mashed potatoes the other day and Alissa's Alfredo sauce with macadamia instead of cashews should be fantastic.

Thanks!

Have you tried Alissa's Onion dip!? It is amazing! The macadamia nuts come out so smooth and yummy, I can't believe its vegan!

Never tried the onion dip. It looks so awesome...

Believe I'll end up buying macadamian nuts more often!

I like to keep things simple...

1 cup soaked Macs
20 soaked dates

Grind in the food processor until it is a paste. Very yummy.

Mmmmm all so good. Have decided I'm going to buy more... the onion dip is over the top rich, the date and macadamian nut made me think of a dessert I had at Jebb's in NYC.

Going to get other ingredients for the mashed taters.
