View Full Version : Alissa's banana cream pie

I made the filling for the Ann Wigmore banana cream pie in Alissa's book yesterday. It tasted great but it is very grainy from the dried coconut. Have you ever had that happen? If I soaked it ahead of time would that make it blend creamier?

I did pull the coconut straight out of the freezer and put it in the blender with the other ingredients. I am wondering if that is part of it too.

Any ideas??

You know I have had that happen with alot of recipes calling for the dried coconut and I have been thinking the same thing... about soaking the coconut to make it softer and changing the texture a bit. I think it's a great idea worth trying for sure.

One thing I did notice was that after it sat in the fridge for awhile it seemed to get a bit smoother.

I think that if you soaked the coconut too it would be much smoother.
