View Full Version : Carmella- ? about your Zucchini Hummus

Hi Everyone,

This is my first post on the board (woot!), but I've been religiously reading the board for months now :) I'm looking forward to getting post replys and recipes now :D Today starts my 3rd week of 100% raw and I'm trying to build a "favorites" list.

One thing I'd like to try is Zucchini Hummus. Carmella, I have the recipe from your blog spot ( which is fab btw), but I'm unsure of what you mean by ground sesame seeds. Is that Tahini, or can I just take my unhulled sesame seeds and grind them in the fp?

Has anyone else tried this recipe, or something similar?

I make zucchini hummus all the time. I don't bother to buy tahini (or any nut butter for that matter-I make all my own) anymore as it is just sesame seeds. I usually put about a cup of sesame seeds in my high powered blender or coffee grinder and then store in a container. Then when something calls for tahini I just use the ground seeds.

Hi sweetpea,

Glad you've come out of lurking mode!:D

I'm totally with Ama, here. When a recipe calls for nut butters, I grind up the seeds/nuts in my coffee grinder (what an awesome little tool!) or FP, then sometimes add a little bit of oil or water to the recipe. I'm all for saving money wherever possible!

There are times when the subbing doesn't work so good (like for Maraw's date truffles which call for almond butter), but it does work like a charm for dressings, spreads, sauces, etc...

Carmella, may I ask why it didn't work in the truffles? Was it the taste or consistency? I do want to make them at some point and would like to know what to expect. Was it not liquidy enough? Would adding more oil help? I can make a sort-of almond butter from my juicer but it isn't liquidy like the type you'd buy.

Oh, I'm sure your homemade almond butter would work. I was thinking more along the lines of just ground almonds as my FP isn't sturdy enough to make actual butter.
