I've got a big bowl of "pasta" at home waiting for some sauce. Any favorites out there? (I have A's book... looking for additional ideas).

My two favorites hands-down are the Pomodora sauce posted here from Sweetgoddess and Alissa's Pad Thai sauce.
The pomodora sauce is as follows (the fresh basil is what REALLY brings this sauce out! I also add a little agave just to give a hint of sweetness for a more "balanced" flavor):
Cappellini Pomodoro
3 or 4 large ripe tomatoes diced quite small -make sure you use ripe, yummy tomatoes!
1 cup raw cold pressed olive oil
2 t fresh minced or ground garlic
sweet onion diced (to taste)
oregano, basil, thyme & rosemary (or italian Seasoning)
Celtic Sea Salt to taste
Mix in a bowl and cover, you can also pulse quickly in the food processor if you dont want it too chunky. Fresh basil is yummy in this. Let sit at room temperature 3-5 hours.
Serve on zuchinni angel hair pasta.
I had pasta with meat sauce last night. I used Russell James' recipe from his lasagna:
Tomato sauce
1 ½c sun dried tomatoes
2 soft dates
2 cloves garlic
2c tomato, seeded and chopped
1 ½T dried oregano
2t salt (depending on how salty your s/d toms are)
1/3c olive oil (I use about 1-2 T then use the soak water form sdt)
2T lemon juice
* Process in a food processor until smooth.
Walnut Meat Layer
1 ½c walnuts soaked 1 hour or more
1c sun-dried tomatoes, soaked for 1 hour or more
2T dark/brown miso (I used 1T white miso)
2t dried oregano
2t dried sage (I didn't have any)
5T nama shoyu (I used 1T)
½t cayenne pepper (I used chili powder)
2T olive oil (I used 1 T hemp oil)
1T agave nectar
1t sea salt
* Grind all ingredients in a food processor, leaving the mixture slightly chunky.
As you can see I made some changes but this was so good. I love the tomato sauce, the oregano really makes it nice.
