could someone recommend the best raw book that deals more with the "nutritional/enzyme/cellular/how it works" aspect of raw rather than recipes?

After the first few chapters that deal with beauty, "Your right to be beautiful" by Tonya Zavasta really breaks everything down and how it works in your body. Also "Conscious Eating" by Gabriel Cousens.
