I could use some suggestions.
You know those 2 meals a week I have to cook the DH? Well, I usually fix meat, a couple different veggies, and bread, which is what he likes. Only now, I have to have a raw element for myself and the kids. So instead the last few weeks it's been more like meat, salad and bread. The kids and I eat salad and the DH gets a salad with his meal.
But he's getting tired of salad. He doesn't really like raw veggies. What he likes are canned veggies, probably because that's what he's eaten all his life. And he won't eat frozen either. I can't eat canned even if I wanted cooked veggies, which I don't they just don't appeal to me any more. Canned food taste like a can, and frozen food taste like frozen cardboard.
Anyhow, what would be a good raw food to fix on his days off? Something that a cooked food person would enjoy?

Perhaps you could just buy some small cans of veggies just for him? Or could you cook a portion of your raw veggies? Would he eat those? My husband loves vegetables that are roasted until just crisp. He does eat raw vegetables sometimes. He just prefers something to dip them in.
What about having a smoothie? Is he open to green smoothies?
Also, search taboule on the board, I got a GREAT recipe today that was a big hit around here, really spiced things up.

how about some raw corn on the cob "buttered" with avocado?
or cranberry sauce?:
You can use fresh or frozen cranberries. For optimal flavor, make the sauce at least one day (or up to three) ahead.
12oz. fresh or thawed frozen cranberries (about 3.5 cups)
1/2 cup honey
1 Tbs. fresh lemon juice
1/3 cup slivered almonds {recipe calls for toasted slivers, but just soak them}
1 stalk celery, deribbed and chopped
1 Granny Smith apple, cored and chopped
Place cranberries and honey in the bowl of a food processor fitted with metal S blade. Pulse to finely chop (do not puree). Add lemon juice, almonds, celery and apple, and pulse to incorporate. Transfer to a bowl and add just enough honey to sweeten to taste. Chill sauce, covered, at least 1 day and up to 3.

or sweet potato salad:
3 cups Sweet Potatoes (raw and shredded)
1 Sweet Apple (peeled and chopped)
1 small can Pineapple Tidbits in juice (better choice is fresh pineapple)
1/2 cup raw Pecans (chopped)
1/4 cup organic Raisins (or chopped dates)
1/2 cup raw soaked almonds blended with water and herbs in blender (original recipe called for Veganaise, which is not raw)
1 - 2 tablespoons Honey (raw & unfiltered)
2 tablespoons fresh Lemon juice
1 teaspoon Lemon Zest (grated lemon peel)
Pineapple Juice from Tidbits or from fresh pineapple
In a large bowl, combine the first 5 ingredients and set aside. In a small bowl, combine the last 5 ingredients and blend until smooth. Pour the last 5 ingredients over the first 5, and mix well. Refrigerate till ready to serve. ENJOY!

a different type of salad, like a beet salad?:
Shred
1-2 beets
3 Carrots
1/2 a head of red cabbage or 1/4 if it is big.
1tablespoon or more Lemon Juice
2 teaspoons Ume Plum Vinegar
1 Tablespoon Caraway Seeds
2 Tablespoons Olive Oil.
Mix all ingredients together.
You can also add chopped scallions, red onion, apple cider vinegar, or green apple.
Everyone who tastes this likes it usually raw food eaters or not.

It sounds like he wants to stick with the things he is comfortable with. I understand about being tired of salads though. Even I get tired of them and I eat my veggies!!
An option would also be to include portions of his "canned veggies" on certain days and then try something new and put a smal portion on his plate. Such as grilled kale and sweet potatoes (with olive oil), sauteed vegies or marinated kale. Etc. Yes, these are cooked veggies but it introduces him to new things that he normally would not eat. If he likes them, he may be open to trying them raw in the future. A benefit is that those raw veggies you are cooking for him (the extra) can be used for you and the kids. Make a dazzling raw marinated avacado/kale salad, dehydrate some sweet potato chips, etc.

You could steam his veggies "to death" and almost can consistancy and then slowly steam them less and less until it's al dente (sp?). Just a thought.

That cranberry salad sounds like something he would like, I'm definitley going to try that one on him. :)

Broccoli marinated in a rasbeery vinagerette.
Sweet potato strings for you and kids, candied yam for him
eggplant pizza for you and kids, eggplant parm. using nut milk and nutritional yeast for cheese for him

maybe soak some bell peppers, onions, mushrooms, and tomatoes in some spices and namo shoyu.
Make some raw tortillas and give him regular ones.
Warm it all in the dehydrator, he may never know the difference in the vegge's, add some meat to his if need be.
