Gold Beet Roots

I was given these by accident. I've never done anything with beets before so I'm clueless. Anyone have a simple recipes for these such as a soup?

The soup sounds good. I was thinking of the beets shredded with some carrots, cabbage, onion and peppers for some type of salad/slaw with a good dressing drizzled all over it.

Maybe I'll try something like that, thanks. I normally don't like beets, but maybe I can make them work as I've made other things work. Raw makes everything taste better. :)

Shred one beet
Shred one pear
Mix with a hand of walnuts and juice from a lemon

Simple and wonderful!
