I made up this recipe for easter sunday.... and they are soooo good :)
10 pitted medjool dates
5 calimyrna figs, stem part removed
1/2-1 cup cashews (depending on how chunky you want them)
1 T raw honey
1 T vanilla extract
1 teaspoon sea salt
cinnamon to taste
Cover dates, figs and cashews with water and soak for one hour or more.
When these are softened, drain and place in food processor with S-blade.
Add honey, sea salt, vanilla, and cinnamon and process thoroughly.
The consistency should be pretty thick, and the nuts will stay somewhat chunky.
Remove the mixture from the processor and using your hands, form into balls about 1" in diameter or slightly larger. Should make about 24 truffles.
Place in freezer and chill. Remove 10 min. and dust with cinnamon before they are ready to serve. (Or if you are eating them yourself, you can eat right out of the freezer :))
