White Chocolate-Strawberry Cheesecake
2 cups fresh chopped strawberries
1 cup cashews (they do not have to be soaked)
3 oz melted coconut butter
1 oz melted cacao butter
¼ cup light floral honey or agave
1 tablespoon lemon juice
¼ teaspoon salt
Blend all of the ingredients in a vita mix or high speed blender until completely smooth.
Crust:
½ cup brazil nuts
½ cup shredded coconut
Pinch of salt
1 heaping tablespoon cocoa powder
1-2 tablespoons agave
1-2 tablespoons cacao nibs
Seeds from ¼ vanilla bean
Process the brazil nuts, shredded coconut, salt, cocoa powder and vanilla bean seeds in a food processor until fine crumbs. Add the agave and cacao nibs until the mixture just starts to stick together. Press into the bottom of a springform pan. If you are making a large cheesecake, feel free to double or even triple the recipe (crust and filling).
Pour the filling over the crust and chill or freeze until ready to serve. This recipe made two 4 1/2 inch by 1 1/2 inch cheesecakes.
Strawberry sauce:
1 cup strawberries
Agave nectar to taste
Blend or mash the strawberries and agave together. Pour over slices of strawberry cheesecake.

I have cashews and i have strawberries, boy do i have a lot.
Yummy to my tummy:)
I'll never look at a strawberry again and wonder, what can i do with it.

OMG I just had an epiphany. Unfortunately I can't eat strawberries yet (along with Kiwi, pineapple and watermelon...but plan on reintroducing them this summer) but OMG I can taste this with RASPBERRIES!!! YUMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMM (in best OM chant)
Or Blackberries....or... drooool...
I've lapsed into a state of semi consciousness...I will finish that thought later...

Yes, this cheesecake was amazing. Everyone who tried it loved it!
I did make a few changes - I used lime juice instead of lemon, and I added more agave nectar to the crust because I couldn't get it to stick together. Also, for the strawberry jam, I used about a cup of strawberries, and a few dates and then blended it up really smooth. Yummy!
Do post a picture if you try it!

I just want to ditto all the thank you's that have been posted so far. :) I am going to try this one day soon, I bet I could get my dad and sister to go for this. I could really see myself enjoying this in the summer months. I am going to try it next month hopefully.
Does it have the thick texture of a cheesecake or does is eat fluffy?

lavenderj, it is kind of both - thick and fluffy - like a firm mousse. I suppose you could vary the amount of cacao/coconut butters to get the texture you want.
