alissa says 112, and not to dehydrate past 105... a chef at a raw food restaurant said 118... whats the real number?:confused:

Excalibur has a very detail explanation on their website regarding circulating air temp. vs. actual food temp. etc...

I think that the temp at which enzymes are killed is 118 but you have to play safe and keep it a bit lower. There is a margin of error in all instruments.
