View Full Version : Raw Vanilla Ice Cream with Chocolate Chip Cookie Dough

Ok this is round #3....

I finally found a base vanilla ice cream that is really nice, and so close to SAD.
My husband and kids went nuts over it, and he made me promise to make it for the next church ice cream social....cuz everyone would rave over it. I love what is possible with raw. Hope you enjoy it!

I saw the raw chocolate chip cookie recipe on this board this morning, so I made that (didn't dehydrate it), and rolled it into balls and put in bag and into the freezer.

Raw Vanilla Ice Cream

1 cup young coconut meat
1 cup raw cashews (soaked for 1 hr)
2 cups raw almond milk (3:5 ratio)
1/2 Tbsp vanilla extract
scraped the insides out of 1/2 a vanilla bean
1/2 cup raw agave

Blend the above in Vita Mix, then pour into ice cream maker till finished in about 30-40 minutes. After it was finished I took a few of the chocolate chip cookie dough balls and chopped them up and mixed in with the ice cream.
Seriously...deliciouso!!!

It's almost 80 deg. today...so perfect timing! Thanks Rawkinlocs for posting the choc. chip cookie dough today ;) I love this raw community!

Wow, that must have taken lots of cococuts to scrape the meat inside. Mine I hardly get any from and even if they giant ones too.

As far as the amount of meat you get from the young coconuts...I guess it's the luck of the draw. This last batch I got a whole cup from 1 coconut, othertimes I'll get 1/2 to 3/4 cup. So you never know how thick that layer will be till you get inside, but I've never had to get more than 2 coconuts for 1 cups worth. And my son absolutely loves the coconut water...so I always feel good about buying them...nothing goes to waste:) The kids are drying the leftover bowls to play with in their playhouse for containers. So their playhouse looks like a scene from an island bar right now:p Aruba, Jamaica, ooh I wanna take ya, to Bermuda, Bahamas, come on pretty momma....off the Florida Keys....(beach boys)

thanks for posting this recipe. i've been dying to find a good ice cream recipe and this looks like IT! one question: in the recipe, you say almond milk 3:5 ratio. sorry if this is an obvious question, but is it almonds:water (ie, 3 c. almonds to 5 c. water)? thanks! i want to get this right so my kids can have some yummy ice cream.

Yes that's it exactly! ( 3 cups of overnight soaked almonds blended with 5 cups water, then strained with milk bag)
Hope your kids like it like mine did!

I made it and it is amazing! I even fed it to some non-raw guests and they enjoyed it too.

My favorite was with strawberries sliced on top.

I will definitely be keeping this recipe in the "favorites" book. THANK YOU!!!

Don't you feel empowered being able to open those coconuts? The first few times I kept asking my husband. Then I decided to just go for it...makes me feel like She-ra...getting good with a blade.:p

I think next time I'm going to make a pineapple-coconut sauce to drizzle on top. Or maybe just make a pina coloda ice cream altogether. It's getting in the high 70's here again so...

Running back to the store for more coconuts...

This is the second week in a row that I have made this Vanilla Ice Cream recipe. It is soooo amazing that I can't believe it is RAW. It tastes just like SAD. My hubby opened up the coconuts...but I am going to try it next time. I LOVE this. Thanks so much for the recipe. :-) I have been eating it with Maraw's Yummy Apple Cobbler every night for dessert.
