View Full Version : AMAZING Raw Vegan Bavarian Vanilla Custard

This is TO DIE FOR, sorry. SERIOUSLY, the general summary from all who have it is, "Um, this is pretty much THE BEST DESSERT I've EVER had". A good friend of mine found the recipe, wrote me like 8 paragraphs about how great it is FIRST - and I'm quoting her here "Buy your coffin BEFORE you try it because you will DIE when you taste it!", then she got mad at me 2 weeks later when she found out I had NOT made it yet. I FINALLY made it 2 weeks ago (many months "overdue"), and OMG, it is UNREAL! I see why it pained her so: my life was so deprived before! (LOL) The flecks in it from the vanilla bean are amazing, just like Breyers disease-causing & inhumane albeit delicious vanilla ice cream....

2 cups young coconut meat (tough to say - 4 - 6 young coconuts?)
1/2 cup coconut water
2 tbsp. OJ
1/8 tsp celtic salt
1 vanilla bean
1 tsp. vanilla extract
1/4 tsp. almond extract
1/4 cup agave nectar
1 tbsp. soy lecithin granules
1 tbsp. coconut oil (I use expeller so it doesn't taste coconutty)

*Note: I'm Italian, so I use a bit more almond extract. Like EVERY Italian dessert is "Amaretto" flavored. LOL! But NONE are as good as this!

HINT: THIS IS PRETTY MUCH MY CUPCAKE FROSTING, I JUST USE A BIT MORE COCONUT OIL, SO IT WILL "SET" IN THE FRIDGE. YOU CAN ALSO USE IT AS A MIDDLE LAYER FOR A CAKE... I DID!

This is DIVINE.

Oh Yummo! I'm in love with fresh coconut for starters so I can only imagine...

I've never had soy lecithin before. Is it essential in the recipe in your opinion?

It's too, too bad that you can't use the regular coconuts, it would't make it smooth enough.

Yes, soy lecithin is a thickener. It is also VERY healthy: Jameth Sheridan (of Healthforce Nutritionals; he makes Vitamineral Green AND David Wolfe hired him to make Nature's First Food, etc) is a devoted raw food vegan and he makes it as a supplement because it is ridiculously good for you. So, it's like using a dab of psyllium to thicken, but this is sweet and not starchy or whatever like psyllium. :-) It's A LOT like bee pollen, if you've ever used/tasted that. :-) I bought a bit in bulk at a local store, though.

Sorry to bother you but could not get the coconuts you are using so i will have to try the regular coconuts. Who knows they may work.

One thing - the raw foods I prepare are to LIVE for not to die for. I use that phrase when talking about SAD/CRAP foods. Sorry, but that's how I feel.
Raw foods are to live for!!!

I totally agree that they are to live for, I understand the phrase. That's why I apologized when I said it -- tee hee. Kind of meant it truthfully, though: So good you'll take a bullet for it. That phrase to me kind of can go both ways, so I don't mind using it. ;-)

Honey - yes, probably, but try a little less b/c it's so much sweeter. :-)

I know nothing about mature coconut meat, so I can't answer, sorry! If it's tough, yes, running it thru a champion on a blank would be excellent!

this recipe looks great, can't wait to try it. those young coconuts scare me tho, they look so intimidating to open.

regarding lecithin, it is great stuff, really good for emulsifying fat so it can be more easily digested, important for people who have had their gallbladder removed. it helps lower cholesterol, too.

oh goodness... I LOVE LOVE LOVE Bavarian creams/custards!!!

I suppose I'm going to finally have to start experimenting with opening coconuts since I have been avoiding it for a while.

btw, your recipes and photos are quickly becoming my favorites!

Listen, maybe try www.youtube.com and search opening a coconut. I know it must be on there. It's NOT so bad. I bought an old cleaver thingy (square blade, not even super sharp as it is old) at a GOODWILL for 50 cents! I just hold it in my left hand and let'er rip. GREAT STRESS RELIEF. I have a case to do tonight! <flexing> LOL

I would recommend I guess "agar agar", for a thickener. It is used often. Or try a tsp of psyllium, worst case scenario. Or, leave it out, maybe use a bit less coconut milk in it (I skip that part sometimes, as well as the vanilla extract. The bean and extra almond are ENOUGH).

DON'T not make it b/c of the lecithin issue! TRUST ME when I say it will STILL be edible. I think agar agar is the best sub, though, from what I've heard. :-)

I will try it. I am going to explore the Chinese import store and hope they stock things such as agar agar. If not, possibly the natural foods store can import it from England.

I made this last night and it was so yummy!!
Unfortunately my husband and my children didn't like it, but I did. I think I'll make it next time without the almond extract and I bet they would love it.
I think the almond extract was too strong for them because they normally love coconut.

See, and I don't like coconut flavoring (I love young cocs, though)... so I use expeller pressed oil (or none at all) and LOVE almond extract. Interesting how we're all so unique, but HEY, MORE FOR YOU, RIGHT? LOL

I made this last night without the lecithin since I didn't have any, and I have to say this was truly, amazingly delicious! I mean WOW! Thank you for the recipe. :D

I'm SO glad you made it. Do you see now why my friend was so persistent? Words cannot express.... (lol). And a touch of psyllium or nothing at all works fine, like you noticed.

One of my favourite desserts is a custard filled napoleon.

I'm dreaming of a sweet "shell" to make for the custard topped with cacao sauce... :eek: *faints*

What about making rawvioli like Pure Food does--with coconut meat as the wrapper, stuffing it with this cream, and drizzling raw chocolate all over the top?

Young coconuts are sooo expensive. Would I really need 4-6 of them!??:eek: Is there another way? How much does this make? Maybe I could justify the $$$ if it makes alot??

Every coconut is different... I was able to make a 1/2 batch with just one coconut... which was just the right amount, because it's so rich! ;)

1 case is 9 coconuts for me. That makes at least twice the recipe, usually. So, it's not so bad. And it IS rich.

I wonder if you'd even have to dehydrate? There's a review of Pure Food and Wine on here that I think LunarFey did and she had the ravioli made with coconut meat; it looks like it's just sliced raw. Wow, that would be a good taste.

Have you ever tried to lick a blender container clean? Because I just tried! Yes, this is THAT yummy!

p.s. Licking didn't work so well... so I added a bit of water and blended it a bit to get all the yummy coconut goodness out so now I have Bavarian Custard in the fridge setting up and some yummy coconut drink to finish off meanwhile. Mmmmm....

By the way, for those who are intimidated by opening young coconuts.... I just posted this thread about the easiest way I've ever seen/found - and it does really work!

I would check www.thesunnyrawkitchen.blogspot for the samosa recipe.

I think the wrap is just coconut meat, pretty much. If you took that and just blended a bit of sweet with it, there you go. I'd use agave...

Okay, this is REALLY good. I didn't have a vanilla bean or lecithin granuales and it was still delicious. I'm making a mini-pie for my breakfast tomorrow using this cream. Mmm....

Can you substitute soy lecithin for bee pollen? I noticed you said they are really similar, and I have bee pollen on hand, but no lecithin (I thought I had some at home, but it has gone bad :( ) I am like 10/11ths through the recipe lol, all ingredients in the blender--and its midnight so no grocery stores are open--I can always save the mixture until tomorrow, go to the store and then put everything back in the blender etc etc....however--if bee pollen works--it would make my life so much easier. Thanks so much for the info! & thanks for the recipe!! it looks awesome--- (also: if you can't get a vanilla bean, would you suggest using extra vanilla?) Thanks so much!! You're the best!!! :))))
