View Full Version : My Raw Vegan Crouton Recipe - Utterly Addictive!

These are TOTALLY addictive!

1) Put Almond Pulp in Large Bowl
2) Add BRAGGS (or similar item)
3) Add a GENEROUS amount of Nutritional Yeast & Garlic Powder, or flavor it according to your likes/needs.
Knead with hands until finely mixed. Should be VERY tart/tangy in mouth! Almost overwhelming.
The KEY is, make these STRONG. Very strong!
Then, pile on a teflex sheet about 1" across, in "crumbled" form (some small, some larger), and DEHYDRATE AWAY. Depending on how wet the pulp was, it may take like 2 days. I never keep track.
THESE ARE THE EASIEST AND THEY ARE TO LIVE FOR. You won't be able to keep your fingers out of them. Bring them to the movies, etc - they satisfy a salty-crunch craving, and are MAGNIFICENT salad toppers. They are absolutely brainless to make, too.

You have got it goin' ON! I had a different type of snack idea in mind when I was tasting the nut milk pulp I had dehydrated one day. My class members were asking if they could taste it - I had never thought to try eating it...and the texture of it reminded me of cheese puffs just a little...so I sprinkled some nut. yeast and sea salt on them and it was good! I still need to tweak it a bit, though. But never thought of croutons! We were "kinda" on the same page with this, though :D

Sounds yum! I'm curious though... what makes it tart/tangy? Do you also add lemon juice or vinegar?
BTW... Just got your veggie-based crusts out of the D and they're looking GREAT! Can't wait to make piz and try them out...

The Braggs and the Nutritional Yeast give them a lot of pow, I would say.
SO COOL you made my crusts! Nobody has ever done that before, LOL!

YUM!!! I LOVE Erica's croutons - they're totally addictive, BUT are definitely full of taste and almost...rich maybe? So I can't eat alot at one time. Which is good, because they're so tasty! I guess what I'm trying to say is a little goes a long way, especially on a salad. I think I'm going to have some right now...this is making me hungry, LOL!

Same here... I have so much almond pulp in the freezer right now as I don't use it much in bread recipes... THANK YOU! I will make this later today, you rawk!

(Still haven't tried Rawkinloc's Cinnamon Buns because of that... sigh)
Oh, I know! Perhaps you could bring some when you'll come over for quiche?:D
Carmella... mmm... quiche. That is next on my to do list. I need a muffin tin first though.
Ok... so croutons are in the dehydrator. They almost didn't make it. I tasted it, decided I needed more of a taste... a little more.... I had to stop myself before I grabbed a spoon or something LOL. I can't wait until these are done.

Yay, sounds great! I'm definitely one of the many that don't know what to do with their almond pulp. Also I've been missing my croutons...:rolleyes:

I almost don't want to share my source for pulp....
There's a local raw friendly health store that sells a ton of hazelnut and almond nut nogs. They make major amounts like 2 - 3x a week. My on-again/off-again BF/neighbor (groan - don't ask! lol) works at the store and as of about a month ago, HE BRINGS HOME GALLON BAGS OF EACH NUT PULP LIKE 3X A WEEK! I have it coming out of my ears, there's a shed out back with a freezer in it and we put it there, I cannot fit it all. OMG, right?? HENCE THE HAZELNUT CUPCAKES - I HAD TO DO SOMETHING WITH IT! LOL! And CROUTONS GALORE!!!
