I put up a post a few days ago about "new" favorite foods since going raw. Apparently, celery is a big hit. Now, I'll be honest, I usually have bought celery only because I was in the mood for something light, bland, and crunchy.

Well, I was inspired. I bought some celery. Either this was "special" celery or indeed, it has some tang to it. Here is what I had for lunch:

Guac with equal parts celery, tomato, and avocado. I put the avocado in the food processor first, let it get nice and liquidy, put the tomato in next, then at the very end I put in some chopped up celery so that it kept some of the crunch from the celery.

It was good! I used celery for dipping. AND I ate the leaves on the end of the celery. I have never done that, but I sort of dug it. I wonder if anyone else eats that part too? Maybe just you kooky celery LUVAHS.:D

I eat the leaves too.

Want something crunchy in the morning - slice some up with a banana and add some raisins. ~ Cathy

Because it’s hard to spread peanut butter on the leaves!

tinystrawberry: I guess because they're looking for celery to be bland, light, and crunchy. The leaves are none of those things. I think I have grown new taste buds since going raw, though!

lafsalot: When I get off of my green smoothie kick, I think I will try that for b-fast one day. It sounds really good. Of course I have no idea where to get raw raisins...

Lol, makes sense.

EvaRB- i've tried the leaves, and after my Aunt telling me not to eat them or i'll have diarrhea , i didn't eat them very often. I do like them though, and I dont believe my aunt, so I guess I will start eating them more! :)

EvaRB You have discovered one of my favorite ways to eat avocados!
I love celery and I regularly add celery to my guacomole. But then I am one of those wacky celery lovers, who add celery to just about everything!

Another celery fave:

I make a mostly celery & sweet apple soup in my vitamix with an occasional touch of tomato, cuke or parsley, as the mood and availability strikes.
Yummy!:p

Don't tell the food combining police!;)
Luckily, I've never had any trouble digesting this concoction!

soulstar: no food combining police in these parts! my husband will have a guac with everything (even nuts! he's a nut!), use carrots for dipping, then have a smoothie with 5-10 different fruits and veggies for dessert. i watch in agony, but nothing happens. he's just more full.

i am SO curious how you do this soup. i might have it for a snack in a couple or few hours! do you just toss it in? do you put water too?

Hi Eva,


The celery is pretty high water content, so just add enough water to please you.
You can start with half a cup to 3/4 and see if you like the consistency, and if it's too thick, just add another half cup or cup of water.

My recipes , amounts change almost everytime I make something. Consider the celery apple the base and add things from there.

Sometimes, I like the soup to be more sweet flavores and I focus on enhancing that. At other times, I try to accent the veggie side by adding more veggies, a little at a time.

For a start, let's say you have 4-5 clery stalks, 1 apple, (and possibly some other veggie you have on hand you want to experiment by adding a little bit of, or a sweetner, or sea salt) It's up to YOUR taste buds!



So after you vitamix the celery, apple and water- taste- if you want to add more savory flavors you could try a a bit of carrot, tomatoes, or some spinach, etc,

If it's not sweet enough you can add a couple of dates or whatever sweetener you prefer.

You can substitute a pear, too.

I love the sweetness the fruit adds to the celery brew!

Well, I don't know why, but I decided to add some oil and apple cider vinegar. Not a good idea. I liked the texture, though, so I think I will try this again without the vinegar. Maybe tomorrow, it was really easy. :) This would be a nice snack on a hot summer's day. Now for the hot summer!

Hi Eva,

Personally, I do not like to add anything sour (vinegar/lime/lemon) to the celery/apple stew. Or oil.

Cukes and tomatoes are enjoyable within the soup.

I could see a bit of avocado, sea salt, and possible a little bit of added sweetener of choice.

It is refreshing on a warm summer day!
