Can anyone suggest a fairly simple, yet delicious, recipe to bring to a raw potluck? (anything but date nut torte or other dessert)

Though I haven't made it yet, I plan on making the KFC Coleslaw this weekend for a large crowd. There was at least one thread in this forum with the recipe and alot of people ooh'd and aah'd over it.

I've actually tried that one and love it, but these people have tried that also. Any other suggestions anyone? :)

I just posted a hummus recipe that is delish...can peel zucc...can use less tahini and olive oil, but can always add....quick to make too....everyone will love it as well...

No-Bean Hummus--Matt Samuelson, chef:
2 medium zucchini
3/4 c brown sesame seeds, soaked
3/4 c tahini
1/2 c lemon juice
1/4 c olive oil
5-8 cloves of garlic (or to taste)
2 teaspoons Celtic salt (or to taste)
dash cayenne
1 1/4 teaspoons paprika
Optional: 1 small red or Anaheim pepper

Blend all ingredients, except sesame seeds and tahini, in a blender or Vita-Mix. Add sesame seeds to the mixture and puree until smooth. Add tahini and blend again (or hand-blend tahini if your blender isn't powerful enough.) Enjoy with crudités, on lettuce leaves, or as a spread on flax crackers.

is VERY good. It's not hard despite all the ingredients. Do you have a dehydrator? It's all made in a food processor, then dehydrated (says 20-something hours, I do 6).

Guacamole and/or salsas are quick, easy and everyone enjoys them.

The hummus recipe is made in food processor...super quick and delish...no kidding....5 minutes or less is what it takes me. No kidding and no dehy. needed.
