View Full Version : Why my pecan praline never turned crunchy?

Hello,

I tried making the pecan praline from Charlie Trotter's 'Raw', except that I used honey, agave, and 1 tbsp of maple syrup instead of all maple syrup, as stated in the recipe.

I dehydrated for 40 hours already (the recipe says 12), and it is still soggy as if I have not dehydrated at all.

Is it because of agave? or honey?

maple syrup crystallizes I think...maybe thats the problem

it's the agave. maple syrup will crisp it up.

I'd say it's the honey. I've seen reference made to the fact that honey stays soft and keeps dehydrated treats from hardening or crisping. I'm thinking you may have better success if you take them and transfer to the freezer. I know honey hardens when refrigerated.

Thank you Thank you! It worked. I put it in the freezer and it turned crunchy. Problem: it's too good and I can't stop eating it. :D

It tastes amazing! Exactly like praline pecans. After putting it in the freezer, it turned crunchy. Just too good to be true.

Sigh, I just finished them, about an 8oz serving. I couldn't control myself. I actually made these for my family, but I finished them before giving them to my family. I haven't been so out of control for a very long time. Not a good thing. I wouldn't recommend making these. Too good to the point of addictive. Tastes EXACTLY like the SAD roasted sweetened pecans.
