I have overpurchased on raw walnuts and was wondering if anyone has some favorite recipes of any kind (always love sweets!) that could put my walnuts to good use. I am pretty new to raw and absolutely love this resource and have been putting all of y'alls info to good use - thank you!!!

put them in the refrigerator to keep them from going rancid. Recently I've been storing my nuts and seeds in the bottom drawer along with my lettuce and that seems to help.

In addition to brownies/raw cookies (which are two of my faves!) I would think that granola might put those walnuts to good use. You could also soak a cup or two of them overnight (to soften them up) and make a creamy cheese sauce by adding a large red bell pepper, salt (optional), 1/8 to 1/4 cup of brewer's yeast, a couple tablespoons of tahini, 1/2 teaspoon of turmeric, a clove of garlic and either a teaspoon of onion powder or 1/4 to 1/2of a fresh onion. You can experiment with this recipe until it tastes good to you - that's what I did and these measurements are approximations only! :)

I like just taking the pit out of a soft date and putting a walnut inside.

YUMMMMMM! Easy and satisfies my sweet tooth!;)

Mixed Berry Pie (so easy yet sooooo good -- I just made one this morning YUM)

Crust:
3/4 C Cashews or Macadamia nuts (not soaked)
3/4 C Walnuts (not soaked)
1 1/2 C dried coconut flakes
1/2 C pitted dates (not soaked)
1/2 t salt

I process the nuts first and grind them until fine, then I added the rest of the ingredients. Press it into a pie pan and stick in the freezer while you make the filling.

Mixed Berry Filling:
1 bag frozen organic mixed berries (they are small... about 10oz bags)
1 bag frozen organic blueberries
3/4 C pitted dates (soaked)
1 T lemon juice

Make sure the berries are defrosted, you can of course use fresh and you can use whatever berries you like... I just happen to have these in my freezer. I put the whole bag of mixed berries in my blender along with the lemon and dates and blended away. I then put it the mixture into a bowl and added the bag of blueberries and mixed it up. After the crust has been in the freezer for about 20 minutes I then poured the mixture into the crust and transferred it to the fridge, covered in wrap.

Now you'll have to wait. You can eat it within 2-3 hours but I found that leaving it overnight was best. It was much easier to slice a piece after it's been in the fridge a bit. This will definitely be added to my dessert rotation.

The raw brownies were so awesome. I did add a tsp. of vanilla, and about 2 tsp of coconut oil as well. My kids loved them - especially my son who always says he doesn't like nuts....! Thank you Lucy and sorry for my late reply - hubby left for Brazil and I had to finish my 30 hours of classes and exams for my profession. The brownies helped me get through it all - smile!!!

Check out the G-Living site and Leslie's Walnut Pesto over Zuchinni noodles. Very good!!!! I just made this this week and was a bit skeptical at first but I loved it. It tasted better having marinated overnight in the fridge and set out till lukewarm. ;)
