Bridle7 was asking me about the kale patties recipe so here goes.

I strongly recommend doubling the recipe as it didn't yield much at all.

Kale Patties
Posted in RawGuru's latest newsletter

2-3 cups dino or curly kale (chopped) (I didn't have kale so I used collard and spinach instead)
½ cup fresh herbs (parsley, dill, or cilantro)
½ clove fresh garlic
2 tbs. almond butter
3 tbs. almond powder
1 fresh tomato
½ teaspoon Himalayan Crystal Salt

Place the almond butter and tomato in a food processor. Process until mixed. Add in the rest of the ingredients. Add more almond powder if it needs to be firmer.

Taste the patty mixture and form into medium sized balls. Place these balls on a dehydrator sheet and press down on them to form a flat round with a fork. Dehydrate for 6-10 hrs at 110 degrees F. Place in fridge once finished. (I doubled the recipe and it made 8 patties)

Avocado Mayo
2 ripe avocados
1.5 tbs. lemon juice
2 pinches Celtic Sea Salt
½ cup soaked really raw cashews
1 tbs. parsley
1 tbs. avocado oil
¾ cup water

In a blender, add the water, then the cashews and blend till smooth. Add the rest of the ingredients to the blender and blend till smooth. Be sure to not to get this mixture hot or over mix it. refrigerate until ready to use.

Toppings for the sandwich (optional)
Sliced tomato, pepper, cucumber, avocado, red onion
Sprouts (sunflower, clover, alfalfa)
Sun dried herb olives
Mixed salad greens
Herbs


Assembly:
On a piece of bread spread the avocado mayo on it. Place your kale patty on top. Add your toppings and close the sandwich with another piece of bread. Place it in the dehydrator to get warm or eat as it.

I'm wondering the same thing... I don't normally put toppings on my burgers so is this okay stand-alone or is it something that is 'eh' and needs the avo mayo or something else.

Well Carmella isn't gonna be able to tell if they were good. She used collard and spinach. So I'm thinking here she's done a little false advertising. You know? Calling the recipe one thing, substituting another...huh? Oh! Yeah! That's right. That's the glory of raw un-cooking! You CAN do that and it still tastes awesome!!! Silly me! :p

Hey gals,
I see that I piqued your curiosity... lol

I just got some out of the freezer so I can taste them again and give you proper, detailed feedbacks. All I remember is that I made some of the batter into patties and some into little 'falafel' size balls and couldn't stop eating those! (Actually, I couldn't get my hands out of the batter either...hehe)

They remind me a little of Alissa's falafels, except for the greens, of course! :D (Perhaps because of the almonds and nut butter called for in the recipe...)

Ama, they do have quite a personality so can be eaten by themselves.

But stay tune, I'll be back with a more thorough review of my 'Green Patties'... (How's that VFL?:D I think I like this name better anyways...lol)

OK, I just wolfed down two more of the little green balls (and have to use serious willpower so as not to get the rest of the burgers out of the freezer and make history of them too!) Oh my, are they ever good! They are soooo tasty! The flavor reminds me a little of cooked spinach, like in spanako-pitas or quiche I guess. It's hard to find reference points, though, as I've never tasted anything like it so far in my raw venture.

For the texture, they aren't as light and fluffy as Alissa's falafels, probably because of the greens.

Definite keepers, though! Perfect to satisfy my ever-growing green craving.

Out of curiosity, did you use any almond pulp or you used actual almond butter and powder?

Hey Ama,
I often sub almond pulp whenever a recipe calls for almonds but ended up using the little pulp that I had (somehow, I can never generate enough for all my projects!) in the tomato herb bread. So I used plain almonds ground up and almond butter.

Actually, come to think of it, I have never made Alissa's falafels with almond pulp.

Pulp works beautifully in cookies, though, so it would almost certainly work just as well for the savory variety.

Let me know if you do try it with pulp...

I am allergic to almonds. Do you think I could use anything else to replace those items? I am also allergic to most nuts but I CAN eat hempseeds, sunflower seeds, pepitas, pecans, peanuts, and pine nuts.

Hmmm.

I really love kale and I have a lot of it.
I just ate a delicious kale salad that I marinated all day long!

You know, looking at this recipe reminds me a bit of a raw spinach quiche recipe I saw in Alissa's book. It has an almond crust, rather than the almonds being mixed in with it. It also has mushrooms and is very good. It seems that processing the spinach causes it to become firm. Or maybe it was the psyllium in that recipe. In this one it would be the almonds I guess. Anyway, it was really tasty, so I am very inspired to try this patty recipe of Carmella's. I'll post again after I've made them and tell you if I guessed correctly.

Mmmmmmmm...Kale salad! I haven't had that in soooooo long!Don just brought back a bunch yesterday (yay!) so I now know exactly what I'm gonna make with it! lol

I bet pecans, hemp or sunseeds would make fantastic burgers. And maybe tahini to replace the almond butter (if you're not allergic). Otherwise, I'd just had a little extra nuts/seeds and oil.

Let us know how yours turn out. I love playing with/learning new variations of a favorite recipe. In fact, the batter for these was actually so yum, I'm thinking of making it as a spread next time...

We're right on the same wave-lenght here! I was toying with the idea of making a spinach quiche and thought I might use this recipe as a base, replacing the almonds with avocado, for the filling.

I have yet to find a spinach quiche recipe I really like so let's see what we both come up with!
