View Full Version : ~Raw Chocolate Ice Cream...you'd think it was the real McCoy!!!

Ok today was experiment number 2 with my attempt at making a raw ice cream to suit my dh and kids tastebuds.
WoW!
Seriously!!!
This has just increased my confindence to play more with my food ;) .
And to increase the joy of everyone on this board I'm more than happy to share my find.

Here ya go:

Raw Chocolate Ice Cream:

meat of 1 young coconut (about 1 cup)
1 cup of soaked raw cashews
1 cup water
1 cup raw almond milk (2:5 ratio)
1/2 cup raw cacao powder
1/2 cup raw agave
1/2 Tbsp vanilla
1/4 cup grated raw cacao butter (then liquified in dehydrator)

Pour all of this into your Vita Mix and blend until smooth and creamy. Pour into ice cream maker , and process for 30-40 min. Try not to devour in one sitting and remember to share :p

when raw people say vanilla exactly what does that mean? Do you buy the extract or do you use the vanilla bean? If you use the bean do you throw the bean in or do you make extract yourself.

I also find something very ice cream like when I combine coconut and cashews. It's the combination that always seems to work great.

Since I don't have cacao butter or powder, what may work as substitute? Wanna play one more time with an alternative recipe? Thanks for sharing.

Last night my husband said even with the soy ice creams (not raw) on the market, he rather go with our frozen bananas and fresh fruits then have to wonder what is in the ingredients (as you just never know unless you are the maker).

Gisele~ I used a non alcohol based vanilla extract, but you could also use the innards of a vanilla bean if you'd prefer.


Sharon~ Yes, that's the ice cream combo for sure!!! The reason I chose that is cuz all the raw resturaunts said that for ingredients...I just didn't know the quantity for the correct amount. Thus the playing began...:)

Carolg~ Absolutely, I think carob would do fine...and I actually think doing it without the cacao butter would still be good too (it just makes the flavor like genuine chocolate, like a chocolate bar). I emailed my raw friend who's a P.T. I work with,(the recipe) and she said her chocolate ice cream recipe came out fabulous too, but she didn't use the coconut meat. So I really think it's something easy to play with. I ran out of coconuts! So go gett er tiger!

would you believe the "standard" grocery store in my neighborhood is carrying the young coconuts. They suddenly just appearred, and I asked the produce guy, and he said per someone's request. They aren't organic...but, they honestly are the best ones I've had here on the mainland so far. Very fresh and sweet tasting. Maybe ask your produce guy? I got the cacao butter from Nature's first law, and my powdered raw cacao from my co-op by wilderness family.
And I'm probably going to the store tonight, so I'm going for round 3 tommorrow. I'm going to play some more with the vanilla ice cream recipe. The gelato one was good, but I want a lighter one also, one more like just standard vanilla ice cream. That way I can play with it as a base to add , mint, cherries, raw chocolates etc, to do whatever with it.
I'm not so much in the mood right now for ice cream cuz it's raining now. But hey...?! My honey's always in the mood. But ya know what...I lost 8 lbs this week , even with eating all this yummy raw ice cream:p
Eating SAD ice cream....I would have gained 5 lbs if I had eaten it so frequently.!!! This is definitely the way to go...Raw!

Unfortunatley, I haven't found any here either at our Whole foods or co-op:( . I don't particulary like the flavor of the vanilla bean straight for some reason...so I soak a cut off piece in water for over an hour, and use that soak water. I know I'm weird. What ta do...what ta do? To each their own right?

I guess you could use coconut oil/butter instead, if you wanted that flavor...chocolatey-coconut? I think it would be fine without it too tho, cuz the vanilla gelato recipe I made was creamy and wonderful without it. I just wanted that extra chocolate flavor...like in chocolate candy, so I added it. Next time I make it I'll try it without and let you know. It's the cashews and coconut that bring the texture together imho.

I only have a little bit left...been trying to savour it. Oh what the heck...Hypnocmt said to have a bowl for her...
