Or close to it. I've looked all over creation to try and find an oil free salad dressing, and to no avail! So I'm begging you, on my knees, to share your best raw low-fat dressings!
I was reading stuff on Frederic Patenaudes Website about oil-free dressings, but I don't have his book yet :-\
So pleeeease share some yummy ideas :)

One of my friends introduced me to this one, she uses olive oil with it, but I choose not to. And for whatever reason it really hits the spot for me.
Lemon Salad dressing:
1 lemon juiced
2/3 cup water
1 tsp Herbamere seasoning/salt
I save whatever I don't use, and store it in a glass container in the fridge.

Also, couldn't you take pretty much any salad dressing recipe and make it low/no fat by just omitting the nuts, seeds, tahini, avocado or oil that may be in it? I mean, usually the nuts/seeds/butters are to make it creamy but you could maybe use half an avocado, or half/quarter the amount of fat than the recipe calls for or maybe nothing at all in the way of fat if that is what you want. The oil is usually to help it bind to the veggies. But I've seen many people simply use orange juice or lemon juice or blended strawberries or what have you. But I don't see why a dressing recipe that has nuts or oil in it can't just have those omitted and still be flavorful, just not as oily or creamy.

I like to blend an orange (sectioned and use the juice too), a tomato, and some ACV. Really good!

After having enjoyed green smoothies for a period of time, I am learning that blended up fruit makes a delectable salad dressing.
I blend bananas and oranges and that makes a good dressing.
Also, bananas and celery, oddly enough, taste delicious on a salad.

i have read scientific journals that state your body does not absorb vitamins and minerals very well from greens without fat. A study was done and 1/2 consumed vegetables with non fat dressing and the other half used dressings with fat...the ones that used the fat dressing absorbed nearly twice the amounts of vitamins and minerals than the non-fat group. Since I read that I will alway use dressings with oil. All you need is a teaspoon or two.

Were these studies done with people who were raw foodists and whose bodies were uninhibited by cooked or standard american food?

Good question!! I'm assuming this was a SAD based diet. I think also in smoothies you break down the cellular structure by blending and crushing the cellulose walls thus making it easier to absorb into your system. I think it was just referring to eating a salad.

Good question!! I'm assuming this was a SAD based diet. I think also in smoothies you break down the cellular structure by blending and crushing the cellulose walls thus making it easier to absorb into your system. I think it was just referring to eating a salad.
Ahh, that makes sense. Most people don't take the time to actually chew their food properly, too, and swallow their food in chunks. A properly piece of chewed food, should "assimilate" just as well as blended food can.

Hey Smilingkyle,
Fred does have a bunch of great no-oil dressings. I've posted a few of them, along with some low-fat salads on my blog (http://thesunnyrawkitchen.blogspot.com/2007/03/splendid-salads.html).
Here is a delicious one that Don has come up with:
Don's Creamy Citrus-Herb Dressing
½ avocado
1 sm. orange
2 cloves garlic
1 tbs olive oil
½ large lemon, juiced (or to taste)
½ large lime, juiced (or to taste)
1 tbs tahini
1 tsp sweetener
Handful fresh parsley and/or cilantro
Dill or dried herbs of choice
Salt, Braggs or tamari (to taste)
⅓ cup water (or more)
Blend until smooth. Add water until desired consistency is reached.
Yields approx. 2 cups
Enjoy!

actually that is true. you need dietary fat to get all the nutrients from greens.
it is kind of a fact(learned it in school)....do a google search & it will come up.
I am not totally sure if it has to be in the same meal or not OR how much fat is needed....???
