The recipe says to let it set up in the freezer. Then thaw in the fridge until it can be cut. If I am potentially the only one eating a huge cheesecake, can I leave it in the freezer for an extended amount of time and pull out a piece at a time? Does it have to stay in the fridge(as opposed to the freezer)? Can I thaw, cut into individual servings and refreeze?

hmmm, i don't see why not. It never got totally solid in the freezer for me but i left it in an hour or 2.
i am making one tomorrow for my DH Bday!
but with my 3 year old & my DH....idon't have to worry about it getting eaten!
i say give it a try in the freezer!

Hi Ericka,
I have made the cheesecake twice. Each time i kept the cheesecake in the freezer.I did not let it thaw. just cut whatever size needed and enjoy

When I made Maraw's key lime pie, I cut it after it had frozen slightly (makes it easier to cut) and then I stored it in the freezer until I wanted a slice...I know next time I make the cheesecake, I will let it get REALLY firm, and then slice it and keep it in the freezer!

I have a question about this recipe. When you measure the coconut oil, do you measure it in its hardened form, or do you want until it is a liquid and measure it?
Also, does the coconut oil overwhelm the flavor? I use a little coconut oil in our smoothies -- about a teaspoon or two --- and the flavor is so strong. And this recipe calls for 3/4 cup.

I've made that recipe twice. You probably didn't read that far, but in the directions, it does say to gently warm the coconut oil. The first time I made the recipe, I wish I'd read the directions first because when I got to that part I had to stop and wait for the coconut oil to warm, LOL. Now I know to get that started before I do anything else. I just put a few inches of warm water in the sink and put coconut oil in a glass measurement cup and sit it down in the sink. It does take a while, but I think it makes a difference in getting it to mix properly with the other ingredients, and to get a more accurate measurement. I think the lemon is the most pronounced flavour, the cheesecake doesn't really taste like coconut, so no worries...

I did exactly this and have it sitting in the freezer. Thanks everyone for the advice.
I didn't notice the overwhelming coconut taste, but my husband did.
It really does turn out beautifully! Personally I don't think it tastes like cheesecake ( but I don't think it's really suppose to), but it has a nice hint of what cheesecake was like. And it has a wonderful flavor all of it's own.

What I did was put it in the freezer and then cut it frozen and ate it frozen.. I liked it better that way but you can thaw it out for a bit. And if you only want to thaw one piece, cut out one piece. It should just pop out nicely and leave that slice in the fridge until softened.
