This is probably the best tasting salsa I have ever had. It's fresh, it's raw, and it's good for you! Here are the ingredients:
Red Onion
Garlic
Red or Green Chili Pepper (jalapeno or other)
Bell Peppers (red, orange and/or yellow)
Tomatoes (fresh vine ripened are best)
Cilantro
Juice of 1 Lime
Kombucha
Apple Cider Vinegar
Honey
Extra Virgin Olive Oil
Sea Salt
First take about 3 Tbsp of kombucha, 1 Tbsp of apple cider vinegar, 2 Tbsp of honey, the lime juice and 1/4 c of extra virgin olive oil. Blend these ingredients in a large bowl until the honey is dissolved and incorporated into the liquids. This is the base for the salsa.
Roughly chop up 1/2 red onion, 3-5 cloves of garlic, 1-2 chilis, 2 bell peppers, 4-5 tomatoes, and 1 bunch of cilantro. Mix well with the liquid base. Throw in a pinch of sea salt.
You can eat the salsa as is, but I like to put about 3/4 of the salsa into a blender or food processor and pulse it about 3-5 times. Doing this creates the most perfect texture. A bit smoother, but still with enough chunks that you can see the different ingredients.
These amounts are all guesstimates. You can add and subtract to your liking.
