Hello All,
I just bought 25lb of dried coconut from a reputable on-line merchant recommended by a few people here. The coconuts just arrived, and they are yellow! :eek: Is that edible?

The 25lb was on sale...

I took a look at their website and it appears as though they're doing it right (dehydrating) so I'd just call and ask why it's yellow? Maybe because they don't put in a preservative?

But I've bought it from many places that don't use preservatives, and they are never yellow. :confused:

Me too! I've also bought from them before and it was white.
Well, I just spoke to them, and they said that as times go by, they turn brown, just like cut apples.

Hmmmmm....I have about ten pounds in my fridge that is still as white as the day I bought it. This batch wasn't from them. Does it taste okay or you didn't want to open it in case you were going to send it back? Guess that's why it is on sale, huh?

Did you know it was "old" when you purchased it? Or did they make it known that it was an older batch? I don't know that it matters, but if it's rancid I wouldn't want to eat it or use it in a recipe.

Yah, I haven't opened them because I'm thinking of returning them. But the shipping will be a lot for 25 pounds, and there's 25% restocking fee. So, I"m not sure if it is worth it to ship it back.

I knew it was older because I asked why it was so cheap before I purchased it. It was not made known from the website.
I just called them again (they're really nice), and the lady that has been helping me said that she tasted them herself and they are good. The expiration date is October 2007. They sure smell really good.

I wouldn't eat yellow coconut.
But I wouldn't eat dehydrated coconut either.
Coconut in it's raw, natural form is white as snow. or coconut. :p
So to each their own.

I just spoke to the company again, and they are willing to refund me for the coconut without charging me restocking fee. Also, I don't have to ship the coconut back to them. My only loss is the shipping charge of about $20 when they shipped the product to me.
