Oh, I made the yummiest taquitos EVER (well, in my opinion) the other day! I started out with one of the corn chip recipes floating around here. When it was time to flip them, and they were still pliable, I cut them into squares and rolled up some marinated portobello mushroom strips in them. Then I placed them back on the dehydrator for the corn chips shells to crisp up. When they were done, I dipped them in some guacasalsa, and I have to admit, even if I wasn't eating raw, I would prefer these over the "regular", meat-filled ones anyday! Sorry there's no picture to post - they didn't last long enough! Anyway, just wanted to share...

Do you mind sharing two things;

1) Which tortilla recipe did you use and,
2) What did you marinate the mushrooms in?

I have been making homemade salsa everyday....CRAVING it! and this would be pefect-

I copied it down a while ago. I wanna say... Cynthia? Carol? Christy? Started with a C, and I'm so sorry I can't properly credit her! I'm sorry! But, as always, I kinda tweaked it a teeny tiny bit. I put 3 cups corn, one medium zucchini, one jalopeno pepper, some red onion (maybe 1/4 of a medium one), a dash or two of sea salt, and a bit of olive oil (just till I got to right consistency) in the food processor until it was well blended. It smelled so heavenly, I wanted to eat it with a spoon right then and there! And as for the portabellos, I marinated them in one cup Nama Shoyu and 1/2 cup olive oil. I marinated them for 24 hours (in strips). I even had some left over, once I'd used up what I could put into a "taquito", and just put the plain mushroom strips in the dehydrator, and lemme tell you... YUM!!!! I hope that helps!
