View Full Version : EGGROLLS, raw - and the winner is....

I know Carmella is always ready for a challenge, but so am I. Since I'm not an expert on my calzones, because I figured out one problem I have is overCOOKED, dead crust, RAWK helped me, but now I know it's ME who has to try the calzone again.

Therefore for those who ready for a Spring Forward challenge, I'm ready to hear about making raw EGGrolls. Yes, pictures would be fabulous too besides recipe. I'm thinking of the recipe to be like this:

calzone dough, then cabbage/carrots/onions or any veggie that you would see in an eggroll, then either create a dipping sauce to go on top of the finished "roll" and more dehydrating happening or quicker yet, make a dipping sauce that you can dip or your pour onto the finished one without having to wait more time to taste using the dehyrator.

So ready, set, go and see what you think about this.

For the side dish, why not some rice--Cauliflower ground up in food processor with some olive oil and garlic minced?

How does this sound???????????

Though I'm not a HUGE fan of the dehydrator, this spoke to my soul! Would surely be interested in an "eggroll-like" offering. It will be interesting to see what's brought to the table :)

I love the idea of using the calzone dough and making smaller stuffed "pockets".

I will most definitely take on your challenge and perhaps take it a little further, trying different kinds of fillings. For example an Indian theme (samosas), Mexican, and of course Asian.

Thanks for sharing! Will keep you posted when I do get around to it.

Sounds like a FABULOUS idea!! I LOVE traditional SAD eggrolls! I REALLY am hoping that someon comes out with a GREAT eggroll "shell". I think I have one in a book somewhere....like a "spring roll" type recipe.....would that work?? :confused: I've never tried it, but the "challenge" sounds fun! I guess I'm in!

Vanessa Sherwood posted a recipe on greenchefs for Vietnamese spring rolls. The shell was coconut meat/water based and resembled rice wraps. It was pretty simple to make. Since the original post, she has updated it to incorporate some flax so it might be a bit sturdier. Take a look.

I thought I saw Vanessa's former eggroll, but love the sound of her newer one. I was thinking the calzone dough and just stuffing it.

Carmella is thinking she'll share "when she gets around to it" and I was thinking we are the second most important thing to her besides Don. I've been fooled. I know everything Carmella makes is fabulous so I'll just have to wait and hope she gets some free time "soon."

Don needs egg rolls too! So, Carmella would really be taking care of Don by coming up with a great egg roll recipe. Hey... we could even include Don in this, he can come up with the sauce LOL... (I still need to try his citrus dressing... on my list!)

I must say though that coconut meat and flax sound like it could be promising... off to check out that link...

We got Carmella committed when life slows down for her and she's into an UNcooking day experinece for the eggrolls. I'm stuck with the calzone dough at the moment but yes the spring rolls sound nice and easier than my calzone dough for sure.

I'm excited here too.

I bet Don can be dragged in for the dip too.

I have an eggroll recipe for the next book. ill try to find it. all my notes are tucked away.

I’m pretty sure it was similar to the enchilada crust, well done and had sprouts and mushrooms in it. I’ll try to find it for you guys.

(Sorry for the teaser, lol, but if any of you want to try it, use the enchilada wrap, just make sure it’s dehydrated longer after its wrapped.)

Thanks. Just saw greasy eggrolls at Whole Foods so that is where my idea came from.

Can you give us a teaser on how your present book differs from the new one? Will there also be pictures? What about testimonies or will that be history? Thanks for sharing.

Yes, I was also thinking the enchil. would work too, but since I'm on a rock and roll to master calzones I thought this would work well.

Oh, in your new book I hope you are putting in stuffed leaves even though Russell James has one. Maybe teach us how to harvest our own leaves and preserve them for the big day.

Ok ...
now I'm craving Asian food. I'd make Vannessa's in a flash if I had young coconuts, but I'm out. I'll have to look into Alissa's ...haven't made the enchilada's in awhile. I remember liking them. That sounds good too.
