Mature coconut meat

Other than coconut cream mentioned recently here, what is there to do with coconut meat? I saaw soem in the store today and couldn't resist it --now I can't find a recipe for it. Help!! Thank:rolleyes:

I sprinkle on salads. Combined with other ground, tasty nuts and seeds.

I just eat it on the spot as soon as I scoop it out of the young coconut. I love it and the "milk."

I have added it to frozen fruit smoothies! It's good stuff!
I like mature coconuts way better then the young Thai coconuts.

I think I read somewhere that folks have made RP's brownies and rolled them into balls and rolled the balls in the coconut flakes. YUM-OH!
