Andy, I love hearing your story. Interesting you said you craved cooked food. That is a question that is nagging me. I began this just yesterday. My question to all here is how do you get around wanting hot food? I'm the type that likes my hot food steaming. :o I think that is what is going to make it hard to convert my dh (among other things). I love sushi. Does that count as raw? I have so many questions..lol. I really do want to do this.

Aloha Jeannie - foods that come out of the dehydrator are often a bit warm, but not steaming hot. I find there are so many varietys of food, and it all tastes so good, I don't miss cooked food. And... technically yes sushi is raw- but it's not RAW VEGAN. That is a choice you will have to make! blessings!

Please forgive my ignorance...doesn't dehydrating involve heat? What about blanching food? It goes in hot water for just a few seconds.. I find it makes things like broccoli, asparagus and carrots come to life and adds a nice crunch. Would that be enough to lose the enzymes?
