View Full Version : Raw Mexican or Southwest Recipes Needed :)

Hi Rawkin' Folks,

I've been raw for a year and a third and love it so far, but at times, I really miss my Mexican food.

I make Alissa's raw enchiladas from time to time as well as her salsa. I have a few other creations I make on my own such as avocadoes stuffed with mango salsa. I also make raw nachos with carrots as the chips with gucamole, raw salsa, and "refried almonds" from the Raw Food For Busy People cookbook. I love Alissa's recipes 99 percent, but the refried beans of hers are just not for me, but I love everything else in the cookbook and make tons of her stuff.

I'm just really needing some good Mexican recipes. I tend to like lighter fare, but am open to any and all suggestions and recipes. I love to create new things, but lately, I'm not so creative LOL. When I was in So. Cal. recently I really longed for Wahoo's Fish tacos :eek:

How about a nice corn salad? Corn kernels, green onion, salsa, avocado, jicama, lime, cilantro, etc.

Also, there is a "refried beans" recipe floating around here that uses sunflower seeds and it's really good!

Have you tried the walnut taco meat from GoneRaw? Throw that in a lettuce/collard leaf and wrap it up with some avocado and fresh salsa and mmmmmmmm....

This fixed the craving for me:

Step 1: Make Alissa's corn tortilla recipe (and when the corn tortilla is pliable, take it out of the dehydrator and form it over a glass bowl and stick it back in the dehydrator. It will come out in a bowl shape!

Step 2: Dressing:
1/2 c. cilantro, finely chopped
1 lime, juiced
1/4 c. olive oil
1 sundried tomato, soaked
1 Tbs. cumin
1 tsp. chili powder
1/2 tsp. jalapeno powder (or cayenne pepper) or a diced jalapeno, to taste
sea slat
pepper
1/2 avocado
Blend together until smooth

Step 3: Salad
1 c. corn
2 -3 tomatoes, diced
1 avocado, chunked
1 c. mung bean sprouts
1/2 c. sprouted quinoa (optional)
(and any greens, if you want to add them)

Step 4: Assemble
Place the tortilla bowl on a plate. In the bowl with the salad veggies, add the dressing, and coat the veggies thoroughly. Then place the salad in the tortilla bowl, and voila! Mexican salad! (Its well worth the extra work!)
