What to look for with spices

When you use spices in your recipes, what do you look out for? I know Alissa says to get them from a reputible company, so, something like Cayenne powder for instance, how would you know whether it was heat treated or not???:confused: :confused: :confused:

I believe Frontier brand is all raw. My HFS sells their herbs and spices in bulk and in small jars.

ah, I don't think they have that brand in England....I'll kepp looking to see if I can find something not heat treated...
