OK. i ordered a lb. of hulled buckwheat. I THINK i already messed them up, though. Do I soak the buckwheat for about 6-12 hours, THEN rinse them, drain them, and let them sprout for about 2 days, meanwhile rinsing them 2-3 times a day (to avoid molding)?
I put them to soak last night around 10 or 11. i should have rinsed and drained them this morning, right? Should I just throw them away and start over? I read in Alissa's book that if you soak them for too long, I guess it's like drowing them, or I may have old buckwheat.

????

I think you are okay with this batch. Rinse well, often. They create a thick water. I don't think you've drowned them. I love buckwheat groats!!!
And yes, you're right in what you're asking about soaking, draining, rinsing...and remember they only need to get just a hint of a "tail" on them.
