Hi all!

This is only one of the curious questions I have asked myself:
Is there a recipe for a tasty vegetable ice cream?

Any ideas? - I never saw 'normal' ice creams made with vegetables...

None that I know of. When you come up with a recipe - you can post some pictures and the recipe!!!

As for me....sounds gross, but I'm also staying away from sweet fruits right now, so this would be a blessing.....if you come up with something, please let us know! I'm thinking the sweeter veggies, like butternut squash?? HHMMM...tricky, maybe someone else has an idea. I've thought about it, but I'm clueless!!

@Veganforlife: unfortunately that link doesn't. The Fraunhofer institute has realized a way to produce food out of agricultural waste. I read about it in a newspaper lately.

I have made a tomato ice cream that was wonderfully sweet and tasty. I just replaced the water in my recipe with pureed ripe tomatoes.
When I lived in Thailand, the local ice cream place used to sell a young coconut ice cream that also had green beans and corn in it. Wierd, but I guess someone must have liked it.

Magus, your post just reminded me that one of my favorite granitas at a local restaurant is the Carrot Mint Granita - so refreshing and a beautiful combination.
Now I am off to experiment with some veggice creams....

You know, years ago I went to a cooking class at a local high-end kitchen store and they made *salsify ice cream* - and it was AMAZINGLY good. I bet we could concoct something like that... a base of salsify and nut milk.... Hmmm.... guess I'll have to break down and get some salsify when I go to Whole Foods again...
