Hi All,

I'm preparing the zucchini and marinara sauce - without a spiral slicer - any suggestions on how to go about paring the zucchini?

Do you have a food processor? I have put the zucchini through the food processor with the grate plate on and then I put it in a mesh colander, sprinkle some salt on it and mix it up. The salt will release some of the water from the zucchini. After it has drained for a bit your ready to eat! You could eat it as is but it will most likely be watery if you don't drain it.

You could also just use your peeler and make it fettuccine instead of spaghetti... or if you have a mandoline (or julienne peeler) you can julienne it.

Speaking of mandolines, I just bought one from Costco (MUI I think the brand was) and it's *wonderful*! I highly recommend it. I tried the OXO one and was not impressed with it - especially for $70+. This one is really nice and only cost $35. So... if anyone is in the market for a mandoline...

If you have a zester, you can use that to make angel hair strands. Just keep going over the zucchini with it. That's another option. :)
