Are they ok to eat raw? I'm trying to lower my sugar(fruit) consumption and I need some staples to depend on and organic sweet potatoes are one of the few things that is relatively common around here. I have eaten them raw before and the taste is fine. I just don't want to be hurting myself.

Sure you can! If you search our recipe forum, there is a recipe for sweet potato pudding or souflle or both. I've also spiralized yams along with zucchini for the pasta sauce and I've also used paper thin slices of yam instead of turnips for the rawvioli. Also, you can dehydrate paper thin slices (made with a spiral slicer or mandoline, etc.) and make dehydrated chips.

What about the skin? I'd rather leave it on but I've heard there are carcinogens in the skin of sweet potatoes. That was definitely hearsay though.
