I found a toaster oven at a department store the other day that had a temperature gauge that went as low as 100. Would it be okay to "dehydrate" things in that for lack of a better appliance? What do you think?

I don't think it would hurt to try, but the thing about the dehydrator that separates it from baking ovens is the fan.

Most of the recepies in Alissa's book use 105 degrees. Why 45?

I think that it would not really work very well, because the fan removes the moist air..it is not just a matter of heating the food. Out in the sun, the air would circulate more, but in a toaster oven..I do not know.
I was thinking about how I got a dehydrator on my local freecycle. It is a yahoo group with local "chapters." Maybe you could try that, and also Craigslist.
Also, Walmart carries relatively inexpensive dehydrators, The Nesco ones, for about 45.00.

A lot of people use these models, or have used them, or something similar as their "starter" dehydrators.

I tried free cycle. I live in Vermont. I think that's all I need to say. So this first one you mention from Wal*Mart goes low enough on the temp gauge? I think I'll order it TODAY if it does. Thank you very much for the links. I'm dying for something different.
