I'm sprouting mung bean for the first time. Today is my 4th day, and it's turning purple(not the tail, but starting at the bean itself). Yesterday, they were still all white. Can I still eat them? They are only 1 inch long. I was planning to sprout 5 days so that I'd get long ones like those in stores.

Have you been rinsing them well every day? A couple times a day? What do they smell like? Taste one. What's it taste like? Maybe yours won't get long like the store ones. Yours may be ready now...

Mine always do that so I try to eat them before they turn purple but sometimes I eat them purple. I'm not sure if it's okay to though.

Thanks for responding. It's rinsed about 6X a day by my Easysprouter machine.
There's no smell to it. It tasted bland.
I went to WholeFoods to check out their mung bean sprouts. They are also purple. I guess that it is ok.

that's what mine look like too. i was wondering if they were done or not. how long are the sprouts supposed to be. the ones in the store look fatter, longer and straighter.
Hi everyone,
For optimum nutrition, the sprouts should not be too much
longer than the seed or bean itself.
I have just finished sprouting my mung beans (first time!) and
they are green in colour on the outside and white on the inside
with white sprouts. They taste awesome and only took 3 days
to sprout.
Cheers everyone!

How come the ones in the store are soooo long? I tried to sprout some one time, and they just didn't turn out....but then again, maybe they did. Do you eat the WHOLE thing, bean and all?? I think mine turned purplish...and I thought they had gone bad....so I think I threw them out. So what should "home-made" sprouts LOOK like, and taste like? Should they be crunchy?? Confused minds would like to know.
