You sure can. Dehydrated eggplant is so yummy. Just peel it, slice into thinnish pieces, marinate and dehydrate until desired texture! I marinated in lemon, honey, olive oil, basil but you can try whatever you'd like!

I just today recieved my produce box and inside was an eggplant. I was clueless how to eat it raw!!! ;)
