I tried a recipe today from another website and it was WAY too sweet for me, so I added a little this and that and came up with this recipe. It is VERY yummy and really satisfies my sweet tooth:
COCONUT CARROT COOKIES
One medium coconut
2 large carrots
1/2 cup nuts of your choice (I used walnuts)
1/8 to 1/4 c raw honey
1/4 tsp vanilla
Open the coconut and save the milk for tomorrow's smoothie. Shred the meat.
Shred the 2 carrots.
Put the coconut, the carrots, the nuts, honey and vanilla into the food processor and process until smooth.
Make golf-ball sized balls and flatten into cookie shapes about 1/2 inch thick.
Dehydrate until chewy.
YUM!
