View Full Version : What are your easy, staple vegetable meals?

What are your favorite quick and easy meal recipes that are not an overly sweet meal, but more on the savory side?
I'm a college student, starting raw, and I'm just looking for about 5-10 staple recipes that I can have, so that every time I go shopping, it's not a big hassle trying to figure out what to eat.
The only appliance I have is a blender and a mandoline slicer, I'm going to get a small food processor soon.
Some recipes that I've liked so far are, Romaine lettuce roll-ups with tomato and avocado on this inside, pesto stuffed mushrooms, kales pieces dipped in guacamole, and sushi rolls (avocado, cucumber, carrot, grated zuchini).
So what are some vegetable (including salads) recipes that you regularly, easily make, and are a staple for you?
Your help is so appreciated! :)

First off - green smoothies. You get a lot of green for your buck.
Second - an avo, a tomato, onion and kalamata olives - whoa!!!

Heavenly salads. Organic greens, lots of tomatoes, celery, cucumber, and blended fruit as a dressing.
Green smoothies, can never go wrong there.
Zucchini put through a saladacco with a tomato dressing.
Yum.

Salads. As a base, greens...romaine, spring mix, spinach, even herbs like cilantro and parsley...then, tomato, cucumber, bell peppers, onions, broccoli (I can never get enough broccoli), cauliflower...or well...I basically graze through the produce department getting whatever looks good and it becomes salad. I like my salads varied, colorful, and often!
Oh, in the summer when corn is fresh, I love to make a tomato/corn salad. Dice up tomatoes (and cucumbers, etc.) and cut the corn off several ears of garden fresh corn. OMG....unbelievably good.
Oh, and since you are shopping for one...don't be embarrassed to get just a bit of this or/and that...you don't have to buy by the pound! There are no "pound police" to come arrest you for buying 1 jalapeno and 1 handful of sugar snaps and 1 cucumber.... and if the cashier frowns at you...just smile sweetly and say nothing!
Oh, and did I mention coleslaw? I love to play with that old favorite too--cabbage (of course) and carrots and grated beets and parsnips...ummm...or broccoli stems "slawed" or...again, have fun mixing and matching!
I try to always keep a container of finely chopped veggies in the fridge: broccoli, cauliflower, onion, tomato, spinach, ANY will do! Bok choy, etc.
I eat it several ways: throw some on a salad. in a wrap, or as a salad itself with olive oil and spices, like Italian spice.
Very versatile and I make it out of what's on sale that week.

Walnut/salsa lettuce wraps
Guacamole on cucumber slices (or just avocado & salt when in a hurry)
Tomato, onion, lemon & salt
Mushrooms marinated in olive or flax oil, dash of apple cider vinegar
I also rotate a few different really simple soups that can last for 1-3 days.

Agree..greens drinks first and second close to what I like w/o onion.....

For me...
Green smoothies (daily and all variety of fruits and greens/veggies!!)
Green juices (all sorts of combos)
Guacamole with added other veggies-avocado, corn, tomato, celery, onion

veggies wrapped in a collard leaf or romaine leaf. I always include avocados because I think they make anything good.
sundried tomatoes. I can eat them by themselves as a meal, I like 'em that much
The more recipes I try the more I realize I like it simple.

I like cutting up tomato, avocado, cukes, cilantro, lime juice. Yum.

I find the tuna/salmon salad go a long way. You can wrap them up, put them over your salad or on crackers. Diverse and really yum.

I like to make a big bowl of chopped cauliflower, onions, garlic, zucchini, tomatoes, kalamata olives ( plus anything else that sounds good). Marinate with oliveoil, lemon juice and sea salt. This lasts a long time. I use it in lettuce wraps, on "pasta" and so on.
